Veggie Lunch! - Serves 2
You’ll Need
Handful of pasta (I had leftovers)
2 big handfulls of spinach
1 tomato
1/2 cucumber
1 orange bell pepper
5 mushrooms
Dressing
1/2 table spoon dijion
2 table spoons balsamic
1/2 table spoon nutritional yeast
mix it up
Now What
Chop and mix everything
Enjoy!

Kelp noodles in peanut sauce with some sunflower sprouts on top from #cafegratitude. So amazing!!! They taste like glass noodles to me but are only 6 cals a serving with 1g of carbs of which that 1g is fiber. It also provides you 15% of your daily calcium needs! Great gluten free sub for pasta-addicts! I’ve been trying to find kelp noodles at the Asian grocer for a while but have been unsuccessful. Have you tried kelp noodles yet? Love em or hate em?
